I think every family has a few favorite recipes that they use often or just can't live without. I have a few of my own that I'd like to share. Maybe you'll find a keeper. :)

Here is our favorite bean dip. Doesn't last long at our house and company seems to love it too!
Festive Bean and Cheese Dip
2 c. cheddar cheese (grated)
2 c. canned Black beans, drained and mashed
1 c. corn kernels ( frozen or canned, drained)
1 c. tomatoes, chopped
1/2 c. salsa
1/2 c. sour cream
1 sm. can diced green chilies
1/2 c. green onion, chopped
1/2 c. pitted black olives, sliced
1 c. Monterey Jack cheese
Preheat oven to 400 degrees. In a 2 quart casserole dish, combine cheddar cheese, black beans, corn, tomatoes, salsa, sour cream, and green chilies. Sprinkle with green onion, black olives, and Monterey Jack cheese. Cover and bake for 15 minutes. Uncover, bake for 10 additional minutes. If desired, microwave covered on HIGH for 4 minutes instead of baking. Serve with tortilla chips. Enjoy!

Cheesy Chicken Penne
4 cups diced, cooked chicken
3 cups Penne pasta, cooked and drained
1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoon butter or margarine
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1/2 cup milk
1 4-oz. can mushrooms, drained
1 tablespoon Worcestershire sauce
1 1/4 teaspoons garlic salt
1/2 teaspoon each - dried Basil, Oregano and Pepper
1 1/4 cups shredded Cheddar cheese, divided
1 cup shredded Swiss cheese
Cook diced chicken and set aside. Cook pasta and drain. In a saucepan, saute onion and celery in butter until tender. Add soups, milk, mushrooms, Worcestershire sauce and seasonings; mix well. Add chicken, pasta, 3/4 cup cheddar cheese and the Swiss cheese; toss to mix. Pour into a greased 13x9x2 inch baking dish. Cover and bake at 350 for 40 minutes. Uncover; sprinkle with remaining cheddar and return to oven for 15 minutes.
6-8 servings.
